Moist vanilla beans exhibit bold, rich, creamy, and buttery flavour notes.
These vanilla beans have been grown in the Yela Mala mountain range, also known as Cardamom Hills, at an altitude of 875 MASL.
Cultivated by a marginal farmer, Mr. Ajith Kumar Prabhakaran on his 2-acre property amongst pepper, nutmeg, and mace.
This lot is harvested in late 2021 and consists of Grade A beans from the Vanilla Planifolia family measuring 14 cm +.
After harvesting, the vanilla pods have been further processed by Vanilla India Producer Company Limited (VANILCO), a Kochi-based Farmer Producer Organisation (FPO) that works closely with marginal vanilla farmers across Kerala, procuring their produce at a guaranteed price, processing and marketing.
VANILCO has mastered the process of curing vanilla beans, this involves 4 different stages – dipping, sweating, drying, and conditioning which help the beans build their vanilla flavour.
